My current obsession are bagged salad kits and wraps. This BBQ chicken salad wrap is the perfect marriage of the two! I’ve always loved my Caesar salad standby but recently I’ve been exploring the other options in the grocery store and I’m pleasantly surprised.
A lot of the newer options have really nutrient dense greens like kale, cabbage, spinach and other veggies like broccoli, carrots and cauliflower. Which means two things: they are more nutritious than romaine or iceberg mixes and they hold up to the dressing way better. This BBQ chicken wrap can easy hold up in the fridge for 2 days.
Our house favorite right now is the BBQ ranch bagged mix by Fresh Express. It comes with dried soybeans, bacon bits, corn nuts and chia seeds. The dressing is barbecue ranch and it’s so good!! It has a yummy smokey flavor that I really like. It makes this BBQ chicken wrap packed with flavor and protein.
For this BBQ chicken salad wrap, I added leftover BBQ chicken thighs that I had on hand. Then I made them a few days later with some chicken breasts I quickly cooked up and mixed with barbecue sauce and that was great too! You can use a rotisserie chicken or even the grilled chicken strips in the freezer section. Whatever you prefer and time permits. BBQ Chicken Salad Wrap
Ingredients
- 1 (10.5 ounce) bag BBQ Ranch Salad Kit (I like Fresh Express brand)
- 1 cup cooked chicken
- 2 tbsp barbecue sauce
- 6-8 count wraps
- 1/4 red onion, sliced (optional)
Instructions
-
Toss all salad ingredients and chicken together until combined.
-
Place ½-1 cup of salad in each wrap (depending on size of the wrap.) Add sliced onions on top, if using.
-
Fold up it up. I like this method shown here.
-
Let sit for 15 minutes wrapper in parchment paper or foil for best results of not falling apart.
-
Filling will keep for a few days in the fridge. For a healthier alternative, you can eat the filling just as a salad and it’s still just as tasty.
