When you’re craving comfort food, nothing hits the spot until you have some. Amirite?! About a month ago I started eating Paleo, I share why in this video, and it’s been going really well. I’m feeling more energized and I’m finally having less sugar cravings.
One draw back of eating Paleo is very little comfort foods are compliant. I do allow myself to go off plan a bit on the weekends but I’ve been trying to come up with yummy dinners that are Paleo as well as delicious and satisfying. Shepherd’s Pie was an easy one! This sweet potato shepherd’s pie is a totally Paleo compliant and super tasty. My husband and kids all loved it and we fought over the leftovers. LOL🤣😂
If you aren’t eating Paleo, you will still love this recipe but feel free to substitute white potatoes for the sweet potatoes if that’s what you have on hand. Now I am still eating yellow and red potatoes while on Paleo but I’m trying to limit them. Hence why I created this version. I hope you guys enjoy it!
Sweet Potato Shepherd’s Pie
This shepherd's pie recipe is a Paleo spin on a classic comfort food.
Ingredients
- 2 pounds ground beef (93/7)
- 1 medium onion, diced
- 3 carrots, peeled and diced
- 2 garlic cloves, minced
- 1 cup frozen peas
- 1 cup frozen corn (canned works also)
- 6-ounce can tomato paste
- 2 tbsp Worcestershire Sauce
- 2 cups beef stock
- 3 large sweet potatoes, peeled and diced.
- 1 egg, beaten
Instructions

Preheat oven to 375 degrees.

In a large sauce pot, add potatoes and cover with water. Bring to a boil and add 1 tbsp salt. Cook until tender, about 10 minutes. Drain and set aside.

While sweet potatoes cook, work on the filling. Heat a 6-quart dutch oven over medium-high heat. Add ground beef and brown until cooked through.

Remove meat to a bowl and drain all fat except 2 tablespoons.

Add carrots and onions to pan and saute over medium heat for 5-7 minutes until tender. season with 1 tsp salt and 1/2 tsp ground pepper.

Add garlic and saute 30 seconds. Then add tomato paste and saute another 2-3 minutes.

Deglaze pan by adding beef stock and scraping up the bits from the bottom.

Add Worcestershire sauce and peas and simmer for 10 minutes.

While filling simmers, mash sweet potatoes with a potato masher. Taste and adjust salt to taste.

Spray a 9×13 baking dish with cooking spray. Carefully pour beef filling into it.

Top beef mixture with mashed sweet potatoes and carefully spread over the top.

Brush beaten egg over the potatoes and bake for 30 minutes until golden and bubbly.

Enjoy! Makes great leftovers.
