Preheat oven to 350 degrees and spray a 9x13 baking pan with cooking spray.
Heat large skillet over medium heat and brown sausage.
Add onions and peppers and saute for 5 minutes. Season with salt and pepper.
Add hashbrowns and turn off heat. Allow mixture to cool.
Beat 15 eggs in a large bowl with 1 tablespoon salt and 1/2 tablespoon pepper.
Pour sausage mixture into egg mixtures and stir to combine. Pour into prepared 9x13 baking pan.
Bake for 40 minutes until middle is set. Cut into squares.
