5 Ingredient Egg Casserole

Ingredients

  • 15 eggs
  • 2 cups shredded hashbrowns
  • 1 red bell pepper, chopped
  • 1 medium onion, chopped
  • 3/4 pound breakfast sausage
  • Salt & Pepper, to taste

Instructions

  1. Preheat oven to 350 degrees and spray a 9x13 baking pan with cooking spray.

  2. Heat large skillet over medium heat and brown sausage.

  3. Add onions and peppers and saute for 5 minutes. Season with salt and pepper.

  4. Add hashbrowns and turn off heat. Allow mixture to cool.

  5. Beat 15 eggs in a large bowl with 1 tablespoon salt and 1/2 tablespoon pepper.

  6. Pour sausage mixture into egg mixtures and stir to combine. Pour into prepared 9x13 baking pan.

  7. Bake for 40 minutes until middle is set. Cut into squares.
