When we first got a Chipotle in my area, I became obsessed with it. I, no joke, would go there 3-4 times a week in college. It was unlike any other restaurants in our area an I just fell in love. However, the price is not so lovely. A few years ago I started working on my own copycat recipes, like my Chipotle Guacamole, and recently created this barbacoa to make Chipotle Barbacoa Burrito Bowl that taste pretty spot on!
Personally, I like to make the barbacoa in the Instant Pot because its quicker but you can certainly use the stove top or slow cooker if you don’t have an Instant Pot. This would be a great recipe to double or even triple for a leftover night or lunches. My husband loves taking this one to work when there are leftovers. You can also use a chuck roast for this!
Chipotle Barbacoa Burrito Bowls
Delicious barbacoa burrito bowls that can be made in your Instant Pot or on the stove top!
Ingredients
- 1 pound beef stew meat
- 1 tsp oregano
- 1 medium onion, diced
- 1 tbsp vegetable oil
- 3 garlic cloves, minced
- 1 cup beef stock
- 1 8-ounce can tomato sauce
- Salt & Pepper
- 1 chipotle pepper, minced
- 2 cups cilantro lime rice
- 1 15-ounce can black beans
- Toppings (tomatoes, cilantro, red onion, salsa, guacamole, cheese, lettuce)
Instructions

Season beef stew meat with 1 teaspoon salt, 1/2 teaspoon pepper and oregano.

In either a cast-iron dutch oven or an Instant Pot, heat 1 tablespoon of vegetable oil over medium-high heat or the Saute function.

Add meat and sear on all sides. Add onions & garlic, saute for 3-4 minutes.

Add chipotle paste and stir to combine.

Add beef stock and tomato sauce.

If using an Instant Pot, close pot, move valve to sealing and press the Meat button. After it finishes cooking allow to natural release for 15 minutes. If using a dutch oven, bring to a boil and then reduce to a simmer and cover. Simmer for 2-2.5 hours until tender. Stirring occasionally.

While the meat cooks, prepare cilantro lime rice. Cook 2 cups of white rice. Add 1/4 cup of lime juice, 1/4 cup of chopped cilantro and 2 teaspoons of salt.

Heat black beans in a small saucepot over low heat until warmed through.

When meat is tender, shred with a fork.

To assemble bowls: Place 1/2 cup of cilantro rice on the bottom and top with black bean s and meat. Then top with favorite toppings. We love cheese, tomatoes, cilantro, red onions and guacamole.
Recipe Notes
You can also use a slow cooker for this recipe. After you sear the meat, put it and the remaining barbacoa ingredients in the slow cooker on LOW for 8 hours.
Versatile, Year-Round Dinner Idea
This chipotle barbacoa burrito bowl is great year-round! In the winter you can rely more heavily on jarred salsa, onions and cilantro to brighten it up. In the summer you can load it up with lots of veggies! Plus, making it in the Instant Pot or slow cooker doesn’t heat up your house.
Additionally, you can use the barbacoa to make tacos, burritos or salads. So if you make a big batch, mix it up throughout the week to make it fresh. One night you can have a chipotle barbacoa burrito bowl and a few days later you can make quesadillas and a serve them with an avocado salad.
These burrito bowls are great to make when you are trying to cut back on take-out. They truly do taste like the real life and your family will happy scarf them down because they are fun to put together. Everyone gets to build it their own way and choose what toppings go on them. Kids can pile on some extra cheese and sour cream and the adults can make them quite healthy if they are trying to cut back.
