Last month my friend Kerrie started a local craft club! She and her sister Sarah planned a super fun night at a local art studio and we had a great time crafting it up without our kids in tow. They named it My So Called Craft Club and they play 90’s music during it. I totally forgot about bringing a snack last minute so the first month I showed up with a box of donuts, lol!
This month we made super cute bunny door hangers and the crowd was way bigger! Kerrie told me she was expecting 30 people so I decided to whip up a big batch of this spinach artichoke dip because a box of donuts just would not do. We again had a blast and I can’t wait to do it again next month. I thought I would share the recipe with you guys since it’s so dang delicious.
I thought I had a bag of mozzarella cheese in my fridge but when I got home I definitely didn’t. So I used 6 string cheese instead, lol! I just chopped them up and mixed them in. You can also substitute Wheat Thins or tortilla chips for the Hawaiian rolls if you want. Truly any carby snack will taste good but the Hawaiian rolls are definitely the best in my opinion. Their sweet flavor lends really well to the spinach artichoke dip.
Spinach Artichoke Dip
Ingredients
- 1 cup sour cream
- 1 cup mayo
- 8 ounces cream cheese, softened
- 9 ounces spinach
- 12 ounces jar artichoke hearts, drained and chopped
- 2 cups mozzerella cheese, shredded
- 1 clove garlic, grated
- 1 tbsp lemon juice
- 1 cup Parmesan cheese, shredded or grated
- 1 tsp olive oil
- 1 tsp Salt
- 1/2 tsp pepper
- 12 ounces Hawaiian rolls, quartered
Instructions

Preheat oven to 400 degrees and spray a 9×13 baking dish with cooking spray.

In a large pan, saute spinach in olive oil until wilted. Place spinach in a clean kitchen towel and wring the excess moisture out. Place in a large bowl.

Add all other ingredients into the bowl, aside from the rolls, and mix until well combined.

Taste mixture and add adjust salt & pepper if necessary. Pour mixture into the prepared baking dish.

Bake for 45 minutes, until golden brown and bubbly.

Serve hot with Hawaiian rolls.
Crockpot Variation
You can also throw everything in the crockpot on LOW instead of baking it. Put it on LOW for about 2 hours before you are planning to serve it, stirring every 30 minutes, and then keep it on WARM for the party. The crockpot option is nice because it keeps the spinach artichoke dip warm all night long. Either way it’s beyond yummy and a total crowd-pleaser.
Vegetarian Fare
I got asked if there was meat in it because the artichokes give it a really nice texture, very similar to meat. But it’s totally vegetarian! If you’re going to a large party with a bunch of people you don’t know, I find it best to bring a vegetarian option if you can. This dip is so delicious, meat-eaters love it just as much as vegetarians so it’s a win-win.
