Hey friends! I hope everyone had a beautiful Mother’s Day. Mine was really great. I can’t believe we’re already halfway through May now. Last week I officially decided to start eating Paleo. I have been playing around with it for a few weeks now but I hadn’t committed. Then a friend told me how she was doing with it and I decided to jump on in. This week I have a Paleo meal plan to share with you!
There are a few reasons I decided to go Paleo. First, my husband is lactose intolerant and while he can take lactic acid enzymes to eat dairy, it still negatively effects him from on occasion. So he prefers to eat dairy-free and I find it easier to just prepare dairy-free dinners. The second reason is that both he and I would like to lose weight and I think the Paleo diet is going to be easiest for us to do. So you’ll definitely be seeing more Paleo meal plans on the blog. We’re still beginners though so we’ll take a bit of time to get it right.
This Week’s Meal Plan
- Sunday: Take-Out
- Monday: Grilled Chicken & Veggies
- Tuesday: Shepherd’s Pie
- Wednesday: Chicken Soup & Salad
- Thursday: Leftovers
- Friday: Chicken Stir Fry
- Saturday: Trader Joe Chicken, Broccoli & Rice
Grocery Haul

Today I knew I’d be out of the house when they were set to arrive so I left them a note in the app to just leave my groceries by the front door. (It was 60 degrees and I knew they’d only be there for about 20 minutes!) I love having that flexibility. Plus, since I’m an Aldi shopper, I’m truly saving the most time since I’m not bagging my groceries!
I love seeing what other people buy at the stores I shop at because it gives me ideas. Also, I love seeing what other people spend on their weekly groceries. This week I spent $174.27 but since we’re eating healthier, that doesn’t surprise me. I know next week will be lower because I bought a few extras this week.
With eating Paleo, I fully expect our grocery budget to increase. More meat, nuts and higher quality snacks will naturally increase the tab. However, we’ll be eating at home more often and that will cut back on our eating out budget. While we typically only eat out once a week for dinner, we’ve gotten into a bad habit of eating out at lunch 2-3 times a week. On top of grabbing snacks likes iced coffees, donuts or ice cream throughout the week too. So overall the grocery budget will increase but the food spending should level out or decrease. Fingers crossed!
