Another week down the hatch! Isn’t it funny that it’s not even actually summer yet?! Regardless of that fact, we’re already in full swing over here in the Undomestic Mom household. Our pool is open and many of our summer activities are under way.
It definitely hit me that I might need to simplify my meal plan in the coming months. The days seem to get away from us and I’m scrambling to get dinner made by 5pm. My friend Katy has given me some great tips to prep in the morning, so I’ll also give that a try!
The Plan
I didn’t even get my meal plan written in my bullet journal this week but I managed to write it on our family menu board. I made this eons ago but it still works great to keep everyone informed of our dinner plans for the week. It’s basically just a picture frame I decorated and write our meals on with a dry erase marker. Here it is hanging on our kitchen wall.
Sunday: Burgers, beans, salad
Monday: Sausage Sheet Pan Meal
Tuesday: Pasta with Meat sauce & salad
Wednesday: Pork tenderloin, Brussels sprouts, broccoli
Thursday: Chicken Stir-fry
Friday: Seafood Ravioli
Saturday: Leftovers/Out
The Follow Through
Sunday through Tuesday I stuck to the plan and then the rest of the week went out the window. I forgot to thaw chicken for the stir fry so I was happy to have my favorite Trader Joe “freezer meal” on hand; Mandarin Chicken.
Then I completely forgot to buy a pork tenderloin so I threw so chicken in the slow cooker and created a super tasty Chicken Tamale Pie. Stay tuned for the full recipe! We did eat out on Saturday; we ordered pizza but I forgot to snap a picture. Leftovers were Friday night and I didn’t capture that magic either:)
Next Week
The meal plan next week is super simple. Summer is a crazy time in general but this summer is especially so. I’d love to hear what you guys made this week and any ideas you have for simple dinners.
