A couple of weeks ago my husband and I decided we really wanted to make our health a priority in 2019. Year after year, we’ve each let a little more weight creep on and having two active kids has made us realize how important our truly health it. Cauliflower fried rice is one of the recipes were loving on our new eating plan.
It’s super tasty and chock full of vegetables! Plus it’s dairy free and grain free🙌 We ate this as the main dish with no sides but next time I’ll probably make my simple 5 Ingredient Chicken Soup to go alongside. Or a refreshing cucumber salad would be good too!
Cauliflower Fried Rice
Ingredients
- 1 12 ounce bag frozen riced cauliflower
- 3 eggs, beaten
- 1 cup frozen peas & carrots
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 tsp ginger, grated
- 2 tbsp vegetable oil
- 3 green onions, sliced
- 2 cups cooked chicken breast, diced
- 1/3 cup soy sauce
- 3 tbsp oyster sauce
Instructions

Add one tablespoon of vegetable oil to large skillet and heat over medium high. Add onion and saute for 3-4 minutes until translucent.

Add ginger and garlic and saute for 30 more seconds.

Add frozen riced cauliflower and saute for 3-4 minutes until lightly brown.

Add frozen peas and carrots and saute another 2 minutes. Then make a hole in the center so you can add the eggs. Add remaining tablespoon of vegetable oil to hole.

Add the eggs to the center of the veggies and let set for 2 minutes.

Scramble the eggs and then incorporate into the veggie mixture.

Add the cooked chicken to the pan and stir to combine.

Add soy sauce and oyster sauce and simmer for 2 minutes.

Stir in green onions and serve.
If you use cooked chicken, like from a rotisserie, this cauliflower fried rice will come together in 15 minutes! You could even substitute leftover pork or shrimp if you had that on hand, or omit meat altogether for a meatless option! (Wouldn’t truly be vegetarian due to the oyster sauce.)
This cauliflower fried rice will please all palates! The cauliflower really does taste very similar to rice when prepared like this. This is one of those healthy eating items that truly surprised me. Not only is it tasty, it’s also inexpensive! A 12-ounce bag at Aldi is only $2.09. I can’t wait to try out more recipes with cauliflower rice.
