Having an easy chicken noodle soup recipe in your back pocket is very useful! You never know when you’re family will get hit with a virus and chicken noodle soup is always great for getting better fast. I make a variety of chicken soups but I wanted to share this super easy to make recipe with you guys because even novice cooks can whip it up quick!
Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 1 cup chopped celery
- 3 cloves garlic, minced
- 2 cups sliced carrots
- 1 tbsp fresh thyme (or ½ tbsp dried)2 quarts chicken broth
- 1 pound chicken meat, cooked and chopped (rotisseries work great!)
- 8 ounces spaghetti noodle, broken into 2” pieces
- salt and pepper to taste
Directions
Heat olive oil over medium-high heat in a large soup pot. Add onion, celery, thyme, and carrots. Saute for 5 minutes then add garlic and saute 1 minute more. Pour in chicken broth and stir in chicken, noodles, 1 tsp salt, and ½ tsp pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving. Season with more salt and pepper if necessary.
