As much as we used to think 30-minute meals were perfect for weeknights, it’s soon becoming that 15-minute meals are the new standard. With after-school activities and running errands after work, sometimes need to get dinner on the table quickly but we don’t want to get fast food. Enter these three easy dinner ideas that are a cinch to make!
Fish, Veggies & Rice
Fish is a great quick-cooking protein. I get the frozen salmon filets at Aldi and thaw them out in the fridge for a day. When I’m ready to cook dinner, I get rice and a veggie going in my rice cooker. If you don’t have a rice cooker, you can grab the microwavable rice packets and microwavable veggies.
I take the thawed fish out of their package and pat them dry with a clean kitchen towel. Then season them with salt and pepper and saute them over medium-high heat for about 3 minutes one side and 2 minutes on the other side. I squeeze half a lemon over them and they’re good to go. Add some salt & pepper and olive oil to the rice. For the broccoli, sprinkle it with salt & pepper and squeeze the other lemon half over it. Easy dinner idea that takes less than 15 minutes.
Black Bean Burgers & Sweet Potato Chips
Aldi has black bean burgers now and I’m here for itđââď¸ Black beans burgers with guacamole (get the premade stuff!), sliced tomatoes, red onion, and lettuce are the ultimate quick meal. Add cheese if you want but if you don’t it’s a great dairy-free dinner. Serve with sweet potato chips for the ultimate easy dinner idea!
Chicken Stir Fry
Stir fry is the definition of quick cooking dinners but chopping all those veggies can totally slow you down. For an easy dinner idea that comes together in less than 15 minutes, use the frozen stir-fry veggie mix from Aldi.
Start off by getting some rice going in your rice cooker or use the microwavable rice packets. Then take a pound of chicken breast and dice it into 1″ pieces. Heat a large non-stick skillet over medium-high heat and add some vegetable oil to it. Season the chicken with salt, pepper and garlic powder and toss into the hot oil. Move it around in the pan with a spatula until it’s cooked through, about 6-7 minutes. Once it’s cooked, take it out of the pan and add a tablespoon of vegetable oil and the frozen stir fry veggies. (Be sure to take the sauce packet out first.) Saute veggies for 5-6 minutes, add the chicken back in and squeeze the sauce packet in. Heat everything until hot and bubbly, about 2-3 minutes. Serve over hot rice.
