Happy Monday friends! Are we still hungover from Halloween? We lucked out and got beautiful weather here in Chicago making the treat or treating an actual delight. But overall the week was kinda hectic so we had leftovers a LOT!
Where are my leftover haters? I know I have some! Leftovers are truly a parent’s best friend. Cook once and eat two or three times? What could be better?
Meal Plan
Sunday: Beef Roast, mashed potatoes, and steamed veggies
Monday: Nacho Leftovers
Tuesday: Chicken Noodle Soup & Bread Machine Bread
Wednesday: Dinner at the Swiecicki’s – Chili!
Thursday: Nacho Leftovers
Friday: Beef Sandwiches & Chips
Saturday: Take-Out – Spiderman Sushi Roll😍
As you can see we ate off those nachos for multiple meals! We could have easily turned them into tacos or enchiladas but we were lazy and who doesn’t love nachos?! The meat would also have frozen nicely if we wanted to use it at a later time.
I also used the leftover beef roast to make beef sandwiches. I love taking a roast of any type and then repurposing the leftovers to make sandwiches or a casserole.
