Happy Monday friends! What’s up July? Have you seen June anywhere? She ran by really quick and I can’t seem to find her. I mean I know I’ve been saying this a lot recently but seriously, why is time flying by SO quick right now? Please tell me I’m not alone. Okay, let’s get a grip and talk meal plans! Let’s see how I did this week following the meal plan.
The Plan
Sunday: FFY/Leftovers (FFY = Fend For Yourself, My friend Meg gave me that one:)
Monday: Tuna Noodle Salad
Tuesday: Tomato Soup and Grilled Cheese
Wednesday: Garlic Chicken Pasta
Thursday: Chicken Noodle Soup & Bread Machine Bread
Friday: Leftovers
Saturday: Take Out

The Follow Through
We stuck to the plan for the most part. The only tweak was that we had an unexpected date night on Friday so we were out to dinner with Sean’s company and the kids had pizza while my wonderful sister-in-law Maggie watched them. We didn’t turn the oven on once this week and that’s basically my only requirement for meals at this point. It’s just too dang hot here in Chicago right now! Although I do find it funny that we ate soup twice this week:)
Kitchen Essential
Speaking of soup, my family is a big fan of soup. One I love to make a lot is a creamy tomato soup that uses jarred tomato basil pasta sauce. Check out my Quick & Easy Weeknight Meal Guide to get the super simple recipe! The only problem is that my husband, Sean, doesn’t like big chunks of tomatoes. He never complains and just eats around them but it bothered me so I started using my immersion blender to blend them out and it really elevated the soup as a whole.
I’ve had mine for over 5 years and it’s still going strong. I use it to make lots of soups, to blend up batters and I even use it to grind up oatmeal for my favorite chocolate chip cookie recipe. It’s so versatile. This is also my go-to housewarming gift because I find that most people don’t have one but once they start using it they love it. Oh, and did I mention it’s only $27?! A total steal if you ask me.
Next Week
I really like that I did leftovers twice on the meal plan last week so I’m going to keep that up. Even though we ended up not going that route on Friday, at least I didn’t over buy at the grocery store. I’m also going to try and use up some odds and ends in the pantry and fridge so we’ll see what I come up with. I’d love to know what’s on your meal plan this week! We are eating lots of soup too. Since we are moving in a couple weeks I’m shopping the pantry a lot and man, I’m all about the challenge of using a bunch of impulse/hunger purchases that have been taking up space in my cabinets. Also my favorite is spending like $50 at the weekly shop because you’ve got most of it already. That tomato basil soup sounds sooo good.
