Happy Memorial Day friends! Hope everyone had a nice long weekend:) If it wasn’t long, I hope you got to relax a bit and spend some time with friends and family. We had a jam-packed weekend full of good times but boy was it hot here in Chicago. It was in the 90’s all weekend and we were a bit toasty. Alas, we persevered and got our pool open to cool off in! It definitely feels like a Sunday though so I’m glad I remembered it was Meal Plan Monday before the day was done!
The Plan
Last weekend was my best friend’s bachelorette party and I was gone Friday-Sunday whooping it up for her last fling before the ring! Whenever I’m out of town over a weekend the plan always seems to get a little wonky. When I got home I tried to get a meal plan together and this is what I came up with:
Bahahahaha! Even seasoned meal planners like myself drop the ball sometimes:) I managed to pull it together or dinner almost every night. Here’s what we ended up eating last week:
Sunday: Dinner at Nana & Papa’s
Monday: Leftovers
Tuesday: Taco Lasagna
Wednesday: Breakfast Scramble
Thursday: Culver’s
Friday: Buffalo Chicken Pizza and celery sticks
Saturday: Leftovers
What We Actually Ate
Sean’s parents had us over on Sunday and that was great because I was in no shape to make dinner after my weekend away. Monday Sean ended up going out after work so I just made some chicken sandwiches with the leftovers from the bachelorette party. Tuesday we had taco lasagna because I just happened to have the ingredients on hand. On Wednesday I went with breakfast for dinner which is a get go-to when you need a last minute dinner.
Thursday was the start to the scorcher of a weekend so we went to Culver’s and skipped heating up the kitchen. Friday we celebrated my brother Magoo’s birthday so I headed to the store for a few things to make his favorite dinner, buffalo chicken pizza. Saturday we went to Sean’s aunt and uncle’s 25th-anniversary party which was chock full of yummy food but we had to leave before dinner so we just threw some leftovers together.
Next Week
This week was pretty crazy and atypical for us but I feel like that’s how summer goes. It’s busy and carefree and not so regimented. Which is kinda nice for 3 months of the year. I still meal plan all summer but it’s simpler dinners and way less cooking since it’s too hot to be a slave to the stove. Plus lots of grilling! Next week will be full of salads if this heat doesn’t break.
I’d love to hear what you guys made over the long weekend or what your favorite summer go-to recipes are! I need to branch out a bit and get some new things into the rotation. Summer crockpot recipes would be AMAZING!
