Happy Monday friends! We’re getting beautiful weather here in Chicago and it’s positively uplifting. Honestly, if I could keep it in low 70’s and slightly cloudy all year, I would. I definitely had warmer weather in mind with this meal plan because turning on the oven when it’s hot outside is torture! Alas, the weather stayed pretty mild but I’d rather err on the side of caution as opposed to melting while I try to roast a chicken.

The Plan
Sunday: BBQ with the Youngs and DiFriscos (Chicken Shish Kabobs, Panzanella and lots of sides!)
Monday: Steak, Potatoes and Grilled Veggies
Tuesday: Cobb Salad, Bread Machine Bread
Wednesday: Tuna Sandwiches and Salad
Thursday: Tacos, Beans
Friday: Chicken Caesar Salad Wraps
Saturday: Leftovers/Out
I did pretty well this week by taking pictures of six dinners! One dinner was a BBQ with friends and I forgot to take a picture of it plated but I did manage to take a picture of the Shish Kabobs before they hit the grill and the Panzanella salad I served with them. My friend Christian made homemade cupcakes with homemade frosting and I nearly died and went to heaven.
The Follow Through
I stuck to the plan for five dinners, one was tweaked a little and one was a complete redo. The tweaked meal was the wraps, we did club wraps instead of chicken Caesar salad wraps and I didn’t make the steak on Monday because I wanted to try pulled chicken sandwiches which are just as yummy but much more cost effective! If you don’t ever do wraps for dinner, I highly recommend it because they are just as easy as a sandwich but feels a little more fancy.
That’s a lot of sandwiches on one meal plan but it’s summer and I told you guys to expect a lot of sandwiches, salads and slow cooker meals. Our night out was a family trip to IHOP after my nephew’s t-ball game because Georgia wanted french toast for dinner and we had no problem obliging her. Of course I forgot to take a picture of what we got but I had a patty melt and Georgia’s leftover french toast because it had Nutella on it and I couldn’t resist!
Next week
I’m going to rummage through old meal plans from this year and make some classics next week because I need to get my meal plan made and groceries ordered from Instacart ASAP if this week isn’t going to be a catastrophe! If you keep all of your old meals plans like I do, you can always have them at your fingertips to reference when your mind is drawing a blank for inspiration. So thankful for your meal plan posts, I was on meal-plan hiatus and you re-inspired me the last few weeks and my life is way better with a plan.
