Winter calls for serious comfort food in this house. And a big bowl of cheesy, spicy pasta is just the ticket! This recipe has been going around Pinterest for years and this is my version of it. If you don’t like spicy, just omit the red pepper and you’re good to go!
Ingredients
- 1 package (12 ounces) smoked sausage
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 can (15 ounces) fire-roasted tomatoes
- 1/2 cup heavy cream
- 8 oz penne pasta
- 1 ½ cup shredded cheddar cheese
- 1/3 cup thinly sliced green onions
- 1 tbsp olive oil
- 1/2 teaspoon salt and pepper, each
- ½-1 tsp red pepper flakes (omit if you don’t like spicy)
Directions
Add olive oil to an oven-safe skillet over medium-high heat. Add sausage and onions and saute until lightly browned, about 4 minutes. Add garlic and saute one more minute.
Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese. Broil until cheese is melted and golden brown. Top with green onions. Serve with a bagged salad kit for a complete meal!
