Happy Monday! Yikes you guys, my consistency has been slipping when it comes to Meal Plan Monday. I promise I’m working out some kinks in my planning process so I can get everything to you on time. I’ve decided to go back to my old way of doing MPM which is giving you the plan from last week and the pictures to go with it. This week is a sneak peek at the Vegetarian $100 Aldi Meal Plan!
Two reasons why. First, I know I can get things up on time because all pictures will be done and I can get the images created before Monday. Writing is only 50% of the post, the other half is making the images. Which is actually my favorite part but it takes time and if I snap the last pic on Sunday, I only have Monday to work on getting everything created. Now I’ll have a full week.
Second reason: People see an image of my meals on Pinterest and click it only to be brought to a meal plan for the next week. I didn’t really think that one through. So, if this is your first time joining me and you just clicked a picture of meals, below is a list of those said meal plan. It makes more sense this way.
Grocery Haul
This is also the Grocery Haul that corresponds with this meal plan but it was filmed a week ago. I try to keep them short but I find it’s helpful for my more visual viewers. Also if my new readers aren’t familiar with Aldi I find that it’s a great resource to see what they actually have and how closely they resemble their name brand counterparts:) Check out my complete vegetarian grocery haul!

Sunday: Out to Dinner
Monday: Vegan Chipotle Chili & Corny Corn Muffins
Tuesday: Broccoli Alfredo Pasta
Wednesday: Sweet Potato & Black Bean Tacos & Cilantro Lime Rice
Thursday: Tex-Mex Stuffed Peppers
Friday: Avocado Buffalo Chickpea Wrap & Chips
Saturday: Broccoli Cheese Quiche & Salad
What I Spent:
I spent $96.85 on my Sunday trip to Aldi. However, they were out of the frozen pie shells for the quiche so I had to grab those separately so my total is actually $2 more. We’re currently budgeting $100/week for groceries so we can save $60/week for our Christmas budget. I committed to 12 weeks and I’m currently 7 weeks in! I’m happy to report we have $420 saved so far.
