Spinach Artichoke Dip

Ingredients

  • 1 cup sour cream
  • 1 cup mayo
  • 8 ounces cream cheese, softened
  • 9 ounces spinach
  • 12 ounces jar artichoke hearts, drained and chopped
  • 2 cups mozzerella cheese, shredded
  • 1 clove garlic, grated
  • 1 tbsp lemon juice
  • 1 cup Parmesan cheese, shredded or grated
  • 1 tsp olive oil
  • 1 tsp Salt
  • 1/2 tsp pepper
  • 12 ounces Hawaiian rolls, quartered

Instructions

  1. Preheat oven to 400 degrees and spray a 9x13 baking dish with cooking spray.

  2. In a large pan, saute spinach in olive oil until wilted. Place spinach in a clean kitchen towel and wring the excess moisture out. Place in a large bowl.

  3. Add all other ingredients into the bowl, aside from the rolls, and mix until well combined.

  4. Taste mixture and add adjust salt & pepper if necessary. Pour mixture into the prepared baking dish.

  5. Bake for 45 minutes, until golden brown and bubbly.

  6. Serve hot with Hawaiian rolls.
