Preheat oven to 400 degrees and spray a 9x13 baking dish with cooking spray.
In a large pan, saute spinach in olive oil until wilted. Place spinach in a clean kitchen towel and wring the excess moisture out. Place in a large bowl.
Add all other ingredients into the bowl, aside from the rolls, and mix until well combined.
Taste mixture and add adjust salt & pepper if necessary. Pour mixture into the prepared baking dish.
Bake for 45 minutes, until golden brown and bubbly.
Serve hot with Hawaiian rolls.
