Brrr!! It’s freezing here in Chicago. Yesterday I ran a few errands with the girls and the whole town was covered in ice🥶 Which is no fun when you’re getting two kids in an out of the car a bunch. But it is the perfect weather for some creamy tomato basil soup and grilled cheese sandwiches!
This meal comes together in less than 20 minutes and will please adults and kids alike. Check out my other quick and easy weeknight meals here! This creamy tomato basil soup also transports great for lunch in a thermos or microwavable container and you can make a grilled cheese at work with these nifty guys! I’ve yet to use them myself, as I work from home, but they have great reviews and are quite intriguing! If you’ve ever used them yourself, let me know what you think of them.
Creamy Tomato Soup & Grilled Cheese Sandwiches
Ingredients
2 jars (24 ounces) tomato basil pasta sauce
2 cups chicken stock
2 cloves garlic, minced or grated
2 tablespoons butter
2 tablespoons sugar
1/2 cup heavy cream
Salt & Pepper
Italian Bread
Sliced Cheddar Cheese
Softened Butter
Directions
In a 5-quart soup pot, add pasta sauce, chicken stock, garlic, butter, and sugar. Bring to a boil and then reduce to a simmer for 10 minutes. Taste soup and season with salt and pepper. Add heavy cream and heat through, about 3-4 minutes.
While that simmers make grilled cheese by buttering to pieces of Italian bread. In a non-stick skillet, place one piece of bread, buttered side down. Then place cheddar on top and the second piece of bread butter side up. Cook over medium heat until golden brown on both sides and the cheese melted in the middle. Serve this creamy tomato basil soup with the grilled cheese on the side. Enjoy!
